Microwave heating is a new type of heating method. When heating, microwave energy directly acts on the molecules of the medium and converts them into thermal energy. Due to the penetrating properties of microwaves, both the inside and outside of the medium are heated simultaneously without the need for thermal conduction, so the heating speed is very fast. For food with a moisture content of less than 30%, the drying speed can be shortened by hundreds of times. At the same time, regardless of the shape of the object, due to the simultaneous heating of the medium inside and outside the object, the temperature difference between the inside and outside of the material is small, and the heating is uniform, without the occurrence of external coke and internal heating in conventional heating, greatly improving the drying quality.
Compared with traditional heating, microwave heating has the following advantages:
